Mac and Cheese, please.

Today I made this Walnut Crusted Stilton Mac and Cheese with Caramelized Onions and Chelsea photographed it for her blog. It's my original recipe and it's mighty tasty, if I do say so myself. Recipe and more photos here.

What is Stilton cheese? Is it similar to a bleu or gorgonzola? Looks sooo good.

Hey Anne -

Yes, Stilton is a very mild bleu cheese. It works great for mac and cheese because it doesn't overwhelm the rest of the flavors.

I'm planning on making mac n cheese this week. Was going to use Martha Stewart's recipe but yours is looking really good so I might change my mind.
